Ingredients:
 150 gm(s) good quality unsalted butter
 3 cloves garlic, roughly chopped
 2 spring onions, roughly chopped
 12 spears of asparagus
 200 gm(s) fine green beans, trimmed
 500 gm(s) peeled, cleaned tiger prawns
  to taste salt and pepper
 6-8 thick slices of wholemeal sour dough bread
 1 lemon
A really simple but yummy supper that utilises one of the best ingredients available at the moment...British asparagus. Ensure you get fresh, slow-grown stuff, not the fast-grown supermarket spears...
Cooking Steps:
Melt the butter over a very gentle heat and add the garlic and spring onions. Infuse over a very low heat, ensuring not to burn the garlic - if the garlic gets burnt, start again!

Steam - or boil if you prefer - the asparagus and green beans until just cooked then drain and set to one side. Note, they will continue to cook a little after draining so be really careful not to over cook.

Strain the butter to remove the garlic and spring onions, and return to a low heat and add the prawns. Keep stiring until the prawns are cooked, and add the asparagus and beans at the last minute and remove from the heat. Season well with salt and pepper.

Toast the sour dough bread. Serve 1-2 slices (depending on size) per plate, pile on the prawns and vegetables, and spoon over the remaining butter. Serve with a large wedge of lemon and a a little freshly ground black pepper.
